They were YUMMY and gluten free!<br /><br />Gluten Free Oatmeal Cookies (recipe adapted from the back of Trader Joe’s gluten free oats; makes about 4 dozen cookies)<br /><br />Ingredients:<br /><br />1/4 cup butter<br />3/4 cup sugar<br />3/4 cups brown sugar<br />2 eggs<br />1 teaspoon vanilla<br />1¼ teaspoon baking soda<br />1/2 teaspoon cinnamon<br />1/2 teaspoon kosher salt<br />pinch of nutmeg<br />1 cup peanut butter<br />3 cups rolled oats (gluten free)<br />6 oz chocolate chips<br />1/2 cup chopped pecans<br /><br />Directions:<br /><br />Preheat oven to 350.<br />Cream together the butter and sugars in the bowl of an electric mixer until fluffy.<br />Add the eggs, vanilla, baking soda, cinnamon, salt and nutmeg. Mix. Add peanut butter and mix.<br />Add the oats, chocolate chips and pecans. Mix slowly until combined.<br />Scoop about a teaspoon of dough onto a greased or parchment-covered cookie sheet.<br />Bake 10-12 minutes until lightly brown at edges. It really is a lot easier to use them also! Your drawer looks very neat. My son put shelves in my sewing room closet and now I have everything stacked on shelves, rather than in a drawer. I have just ...I love your jelly rolls, no calories!<br />I have just started going gluten free, so far haven't tried recipes, just cut out the bread and flours, noodles etc... really seems to be helping with my hands not being sore. (and I've lost about 10lbs)<br />I don't have a system for the scraps but keep thinking I am going too one day.
